clicks: before, you could hold down the mouse over a menu title, the
menu would open, you would move the mouse over the menu item and then
release the mouse to select this menu item. Which means that you could
select a menu item with one single click.

Now, you have to click to open the menu, then click again to select
the item. I strongly dislike this behaviour. Maybe I missed a config

I cannot remember having changed anything there, but I'd prefer the current behaviour: With the exception of the initial click it's the same as in the main-menu. It's what you get when you configure menu=push for the main-menu too. Holding down the mouse-button while moving the mouse can be quite uncomfortable too. But maybe it's possible to have both - as windows does :)

Also, I find the left hand whitespace (before the first menu title) in
window menu bars to be too large. I understand it's the same as for
the desktop menu bar (where it could be argued that it doesn't serve
any purpose either) but it makes the window menu bar look shifted to
the right.

That is right. I would place the first menu one or a half character to the left (in both menubars).

To end on a positive note, apart from the above comments, I find the
XaAES window menu bars and popup menus very well implemented.
