For EmuTOS, it will be easy.
Get emutos-amiga-floppy-20170129.zip there:
https://sourceforge.net/projects/emutos/files/snapshots/20170129/
Write emutos.adf to a real Amiga floppy (could be tricky), or just use a
Gotek/HxC, if you have one.
Then boot that floppy: it will just work. Your Amiga will be able to read ST
floppies and run some ST software (no direct access to Atari hardware,
monochrome only).
For FreeMiNT, it is as usual: use standard binaries according to your CPU.
The only problematic part is mass storage: you need something like a hard
disk. EmuTOS only supports A600/A1200 IDE.
