You are right, I experienced that, too.
But it is a problem with the configure/Makefiles, rather than a cross-compiler problem. A common solution is to provide the answers to the configure scripts via a cache file. I saw that on emdebian, which heavily uses cross-compilers.

This is an important problem that must be taken in account.

Remember I'm building Gentoo on my CT60 Falcon and it works building
from source, albeit some packages can take a while to compile such as
GCC, but the majority are relatively quick.

Oh, I didn't remember you built it natively. That's impressive.

About the GCC package itself (I mean GCC sources), it is absolutely huge, and takes a while to compile, on any hardware. It is really an exception. Other packages compile in a quite acceptable time.
